Cafe Fleur by Chef Sau: A Taste of Capampangan Avant-garde Cuisine

"I never thought it will be this beautiful.." is my initial reaction when I first stepped in Cafe Fleur. A few months ago it was an old ancestral house that sooner or later will collapse. But now, here it is, a beautiful and quaint restaurant.



As a true blood Capampangan, I am very particular with the food that I eat, I think it is because of our sensitive taste palate. Hehe. Kidding aside, it is well known that Capampangans are good cooks, and of course we have a great line up of well renowned Capampanga Chefs. One of them is Chef Sau del Rosario, Chef Sau, built this restaurant to pay tribute to his Capampangan blood. "It is my homecoming gift to my roots" he said. All of the foods that are being served in his restaurants were inspirations from his travels. Why Cafe Fleur? "Fleur is a french word for flower, and it is a reminiscent of our old house here in Pampanga, where we grow flowers in our garden" Chef Sau said. 



The first floor of the restaurant houses a Cafe Like room, where you can share a cup of batirol over a slice of cake with your friends.






While the other one seems to be an Asian Marketplace in Thailand, thus the name: "Leh-leh"

While the second floor houses two rooms, the larger one is "Babo" 




And the other room which is best for small gatherings..


And again, what is a restaurant tour without the foods?

Tamales Pampanguena: I am big lover of Tamales, and this one satisfied my appetite. And as usual, it is best paired with a bread or two.

Tinapa Truffle Mousse: This one's unique but not a fan though.

Fried Catfish and Green Mango Salad: A Capampanga version of the Maki Salad, I can say that I am a fan of this salad .

Pako Savage: This is a special Pako Salad, drizzled with sweet vinaigrette, it's so good that you don't want to stop. 

Chicken Satay

Crispy Okoy and Shrimps: Freshly cooked and it goes well with its seasoned vinegar.

Lengua: One of my favorite dishes, this one is perfect with its creamy white sauce.

Creamy Rellenong Bangus: A different take on the traditional stuffed milkfish that is being served at home

 Ulang Guava Sinigang: A traditional Capampangan cuisine perfect for cold Ber-months.

Lamb Shank Kaldereta: Too bad I don't eat Lamb so I don't have anything to say about this one. hihi :D

Adobong Duck: Before I got married, I don't even eat duck, but now, guess what I get to eat "bibi" now because of my husband's influence. What can I say? this one's delicious :)

And after we eat this yummy dishes, we were served with delicious and unique cake slices. And I love everything!

It was a wonderful experience to dine in Cafe Fleur, I really admire Chef Sau's dedication and passion. And with that, I am here to spill a secret.. Another restaurant by Chef Sau is set to open its doors by October, and I can't wait to visit the place soon! I bet it will be one for the books too.

A late friend of mine was a Capampangan and yes, she and her aunt were good cooks. Your posts are making me hungry. Slow down on pictures next time. Have pity to people who have great imagination that a mere photo could make them salivate. Lol
